Recipe: Dandelion Hot Cocoa

This cocoa is just heavenly! If you've ever had the pleasure of tasting roasted dandelion "coffee" you'll understand just how rich this hot cocoa recipe can be... it is a great way to kick the coffee habit, as well.

Ingredients
 3 tbsp roasted dandelion root (see below for instructions, if needed)
 1 tbsp raw cocoa powder
 ½ cup milk or non-dairy milk of choice
 1 tbsp date syrup or raw honey
 ½ tsp cinnamon
 ½ tsp pure vanilla extract
  tsp nutmeg

Directions

Simmer roasted dandelion root and cocoa powder in 3 cups water, simmer mixture gently for approximately 30 minutes.

Strain mixture.

Add remaining ingredients to strained mixture, stir to combine.

This hot cocoa is delicious topped with whipped coconut cream!

*note: If you already have roasted dandelion then your cook time will be about 30 minutes.

Roasting Dandelion Root

The following steps are from Learning Herbs. Please check out the link below the steps to learn more about roasting dandelion root. *be sure you know what you are looking for... you'll want to ensure you have dandelion and not a look alike.

  • Gather and gently wash the roots, leaving as much of the root sheath on as possible.
  • Finely mince the roots and dry them thoroughly. (If you live in a humid environment you may need to use a dehydrator.)
  • Once thoroughly dried, roast them in a dry cast iron pan on medium high heat, stirring frequently. You’ll know they are done when they have turned a darker shade of brown and have a rich aromatic smell. Avoid burning them. You can also roast them in the oven at 350 degrees, checking on them frequently to stir and keep an eye on them to avoid burning.
  • Once roasted you can store them in a dark, airtight container for up to a year.
