Cinnamon Date Coffee Cake

Here is a wonderfully-healthy version of a classic coffee cake. The banana and almond flour makes it a tad more moist than traditional coffee cakes (thank goodness, right?!). If you are not a fan of cinnamon you can omit this from the recipe and it still comes out quite tasty. We feel this is super-quick to whip up and is one we have made for many special occasions and gatherings. Great to bring to your next meeting or event! or perfect for a quick meet-up with the neighbor.

INGREDIENTS
CAKE:
 1 med-large mashed, ripe banana
 ½ cup coconut oil or grass-fed butter
 3 large eggs
 1 tsp pure vanilla extract
 1 cup filtered water
 3 ½ cups almond flour
 1 tsp baking soda
 2 tsp baking powder
 ½ tsp cinnamon
 1 ½ cups chopped, pitted dates
TOPPING:
  cup chopped, pitted dates
  cup chopped walnuts
  cup flaked coconut
  cup coconut sugar (optional)
 ½ tsp cinnamon

Preheat oven to 350 degrees Farenheit

Beat together mashed banana and coconut oil until creamy.

Add eggs, vanilla extract, and water; beat until well combined.

Measure in flour, baking soda, and baking powder, and beat well.

Stir in 1 1/2 cups chopped dates.

Spoon batter into a well-oiled (coconut oil, palm shortening, olive oil, whichever you prefer is fine) 9 x 13 baking pan. Spread batter evenly in pan.

Combine topping ingredients and sprinkle over batter.

Bake in pre-heated 350 degrees F oven for 20 to 25 minutes or until knife inserted comes out clean.

Cool on wire rack.
